Breakfast - French Toast
(FYI...French Toast is not Mexican food. But if you really want it for breakfast, it's okay to include on your Mexican Thanksgiving menu.)
Midday - 7-Layer Dip, Doritos (for dipping), Veggie Tray
Dinner Preparation - Use as many pans and dishes as you can.
Especially if you are only cooking for two people.
Dinner - Bean Burritos, Chicken Enchiladas, Crunchy Tacos, Refried Beans, Spanish Rice
Dessert - Dutch Apple Pie (not pictured...also, not Mexican), one or two scoops any flavor Ice Cream
(The dog can guide you to where you hid the ice cream from your husband.)
Enjoy your Mexican Thanksgiving meal at the coffee table while watching Harry Potter 6 in preparation for seeing Harry Potter 7 with the birthday money you received a week ago from your sister!
The story behind our Mexican Thanksgiving:
For the past few years, Matt has complained about eating the "same old thing for Thanksgiving" and has requested Mexican food each time. Of course, when you're eating with a bunch of family or inviting friends for the feast, you generally giggle at your husband's request and serve the traditional turkey and stuffing. This year we were on our own for Thanksgiving and so we honored the turkey's mantra to "eat more chikin". It was a lot of fun, I didn't have to fight the crowds for Thanksgiving food sales - the Mexican aisle was empty - and we had a blast. I personally missed the traditional grub, but it was worth seeing the smiles.
Is it just me, or do I have the cutest dog
in the world???
